Play Group Dilemma...Need Help

Next time we meet for play group, I am in charge of food. Normally, I'd just whip up a batch of good ol' Texas Eggs, easy as pie. But here's the problem: One of the moms has a severely lactose intolerant baby, so she can have NO dairy. So I need some ideas for a recipe that can feed about 10-12 people, and that I can preferably make the day before and just heat up right before playgroup, and has no dairy, and isn't particularly gassy since a lot of the moms are nursing. Whew! The last two times, we've had soup. Any ideas?
