Mexican Pork Pie

Here is the Mexican Pork Pie. The recipe is from the One Dish cookbook from Williams-Sonoma. I stuck to the recipe except I used tomato sauce instead of tomatoes, and I put cheese on top (it ain't Mexican if there's no cheese). I think it needed something, but I can't figure out what. Maybe some cheddar cheese mixed into the polenta. Kev reckoned it needed some carrots or something to make it more stew-like. Anyway, we'll have left-overs tomorrow, and maybe it will be better after sitting in the fridge for a couple days, getting happy as Emeril would say.
